If you have any phone that isn't running "Vanilla" android, flash Cyanogen. Sense, Blur and Touchwiz UIs are pretty, but they drain a shit ton of battery and waste a lot of CPU.

Haha it's the specific UI that is "skinned" onto the phone. Vanilla android is the barebones UI. From here, companies like HTC, Samsung and Motorola will implement their own UI to make it unique. I haven't messed with ROMs in a few years so I don't know what is out there now
