Lost 70 lbs on atkins in 2 years now off and need help building muscle

Hi I'm new at this site i'm 34 year old male who lost about 70 pounds being on the atkins for about 2 years.I no this was wrong but any jump start is great for anyone and i finally noticed the drained workouts i had at the gym, and one day i was boxing and iv'e never seen my body being shunt down from dehyration and people where starting to say i have a skeleton face and that made me change.I started doing the body for life to gain back the muscle i lost.I did this for about 4 months and now i noticed a change and liked what i saw slowy.But now i want to add more muscle mass.I introduced carbs good ones back into my lifestlye and noticed a huge change on not being so fatige on my workouts.My question is I'm just a little confused on pre and post nutrition and to gain mass should i be doing compound sets vs isolated set?and how much protein and carbs should i take.I weigh about 186 and i'm 5''11.I start my morinng off with oatmeal and take a nitrotech protein with celltech,after workout i take another celltech and wait about 1 hr then i have a steak with broc and wheat pasta.Am i on the right track or am i just rushing for results?
My workouts are
monday: chest shoulders
Tuesday:back/abs
Wednesday:bis/tris
Thursday do either abs again or cardio
friday off

Congratulations on the weight loss and life change...
The only problem I see is that you don't seem to train your legs with weights...
