You're 212 pounds and you're consuming 2120 calories per day?!!? That's starvation! I would bump your calories up to ~2900 kcalories/day. As for protein intake multiply your LBM by 1.5-2 grams. Then build the rest of your diet around that.

sara; post-workout make a shake with 5 grams of dextrose/maltodextrin per every 10lbs/LBM and 2.5 grams whey protein per every 10lbs/LBM. Right after you workout slam 1/2 of the drink. Then sip on it slowly for an hour as to not let your insulin levels dip. It's highly anabolic! :D

Pre-workout in the morning. Have eggs, oatmeal and toast 60-90 minutes before you hit the gym.
An apple contains too much fiber which would be counter-productive to the recovery process imo.

I've always had much better results when I spike. Without spiking I feel terrible. I would rather inhibit fat loss that lose muscle. :)

True, however, after an intense workout insulin has been shown to enhance GH.
Losing fat is all about the diet, not post-workout spike. You're only asking to lose muscle by not spiking.
