burnt yam..still o.k?

So I attempted to make sweet potatoe crisps by par-boiling, then baking them. I forgot about them, and left them baking too long. However, they were sooooo good. Some were a little too crispy and had blackend, but I kinda liked them burnt. Do you think they're still nutritious, even though they were mostly burnt?
 
Obviously the longer you cook something, the more of a chance your going to detriate and destroy some of the vitamins/minerals.
However, if you like them a little bit burnt, then eat them a little bit burnt! Honestly, if the grand scheme of things, if you follow a healthy diet, exercise regularily and non stupidly, then having a little 'burnt' yams aren't going to harm ya. So eat up!
(the only time I could see it being a problem is if you burnt them to practically charcoal ;) )
