Carrots are healthier if you don't peel them
Carrots contain different groups of phytochemicals that have a positive effect on health, the most important of which is perhaps the group of polyacetylenes. When you peel carrots, you throw out half of those polyacetylenes, Danish researchers reported in 2008.

Polyacetylenes make cells more sensitive to insulin and protect against cancer.A group of Danish scientists, who by the way generated the bulk of our knowledge about polyacetylenes, peeled carrots and then determined the concentration of polyacetylenes in the skins and peeled vegetables.
Results
The peels contained about ten times more falcarindiol than the peeled roots. Falcarindiol is the main polyacetylene in roots.

Based on what we know about the amount of product you lose by peeling carrots, we estimate that by peeling carrots you lose about half the amount of falcarindiol.
