So I took my clean pancake recipe and modified it slightly and it doubles as a great base for pizza. I made it tonight and it turned out fantastic.
Base:
5 egg whites
1/3 cup oats
Beat together
spray pan with pam and cook like a pancake
Once you have flipped to cook second side, lightly brush with olive oil. When it is completely cooked, flip the base for your pizza on a pizza pan or cookie sheet ensuring olive oil side down.
Sauce:
1/4 cup no salt tomato sauce
add oregano, basil and onion powder to taste
Spread over base
Toppings:
Go crazy here! Chicken, mushrooms, tomoto, green onion, peppers etc etc.
Top with low fat ricotta cheese (I simply spooned little half teaspoons in a few areas over the top). Add some cracked pepper. Place in pre-heated over for 15 minutes or so on 400. Every oven is different so keep an eye.
When it's done let it sit for a few minutes...the outer ridges of the pizza base will get a little crispy.
Enjoy! Lots a typing for a little pizza but it took me 10 minutes of prep time. Delish!
