I'm in college and have a meal plan at the university, so it is hard to get a lot of decent food, especially 5-6 times per day. My question is this- if I were to bulk more slowly, say 500 cal over maintenence/exercise per day, I would get the same results just more slowly, correct? And I am guessing that maybe the fat loss would be less in this method as well?

Yeh, generally the smaller the calorie surplus the slower the gains in size will be (depending on the consistency of your training routine of course) and yes, in general, providing your diet is good (good ratio of carbs:protein:fats(healthy)) then a small surplus will mean less of your gains are going to be fat, as apposed to Lbm.
