Right now I am slowly cutting but on fri/sat night im out til about 3am instead of my normal 10-11pm bed time i dont hit the sack til 3:30am. So obviously I have an extra meal, does this affect my calorie intake, or not since i am awake? I mean should I not eat an extra meal or just eat an extra meal and eat less during the week?

Go to bed at a descent time so you can have enough energy to have a good workout the next day. If you eat more food then you get more calories... So yes, any food you eat will affect your calorie intake regardless of the time.

I dont workout on the weekends...

Yea but fatigue will affect you for more than one day. If you only get 4 hours of sleep on friday and then get 4 hours of sleep on sat and get 8 hours of sleep on sunday then thats still only 16 hours of sleep for 3 days. If you workout monday on 16 hours of sleep in the past 3 days your body is going to hate you. Rest is one of the key steps to building muscle and is often overlooked.

just eat again... you are up and active so you will probably need it and an extra 300 cals over the course of the week is not going to do you any harm.
