I loooove swordfish! Anyone have any good recipe ideas for swordfish? Preferrably something low fat. I will eat pretty much anything, so fire away! Oh sure, I could look a recipe up in a book, but I'd rather have something that you know is actually good. I'd hate to waste $10 a pound swordfish on a bad recipe. Thanks!
 
I cannot rival Ginni's culinary expertise, but I can speak as a primitive male who wants his swordfish and wants it NOW! I highly reccommend Golden Dipt Ginger Teriyaki marinade. Available at fine food stores across the nation. I reccommend it for all fine cuts of flesh.
Marinade your swordfish for at least several hours and then GRILL IT! Preferraby on a Charbroil Cooking Zone 2000, the latest in outdoor grilling technology. Lightly recoat with each flip. You cant miss with this stuff. Very little preparation time involved. Leaves time for the important things, like watching the game and working on the golf swing, etc. Bon Appitte!

Here is another one.. Try this out...

Margarita Swordfish

2 lbs. Swordfish Steak
1 Qt. of Pre-mixed Margarita Mix
½ Cup Lime Juice
½ Cup Tequila
2 Shots of Triple Sac
3 Tbs. Clear Jel, Corn Starch, or Arrow Root (Clear Jel preferred)

Cook these ingredients over medium heat and reduce to about ½ of the original volume (the alcohol will evaporate during this cooking).

Now after grilling your Swordfish to perfection take a large ripe strawberry (green stem still attached) slice strawberry so you can fan it out. Place this fanned berry on top of two thin slices of Kiwi, which have been placed on the Swordfish steak. Pour some of your sauce over the fruit and Swordfish and around the edge of the fish. If you would like a little texture to your sauce you could add Toasted Almonds, fruit pieces such as sliced green grapes, mango oranges, raisins, etc.

DONT HAVE A GRILL! Well with your wedding on the horizon, I'd start dropping some hints to those you know are late shoppers. How can Baboon exist without a grill. MBC, Trust me, get one. Baboon will end up doing alot of the cooking. He'll consider the grill his domain. It's a guy thing.
 
I agree. We need a grill. Problem is, we live in an apartment complex that does not allow them. We'll be house hunting this summer, so we'll have a grill soon enough.
 
That margarita recipie sounds GOOD!

Here's a good one- it sounds a little wierd, but it's not bad. I don't like to merinade with teriaki, so I rubbed the fish with lemon-pepper, grilled it, and prepared a glaze by heating up sume apricot preserves and stirring in a few dashes of teriaki sauce. I like to keep things simple
