Grilled Salmon

Ok, so we've got a nice hot grill here and we're going to go ahead and start some salmon fillets. I've already given it a scrub with a rag with some canola oil on it, and I'm going to go ahead and give it a quick spray with some grill spray here. Be careful not to hold the can too close to the flame here. I'm going to start this salmon with the flesh side down first. I've seasoned that with a dry seasoning mixture of garlic salt and lemon pepper so I'm going to get some good lines on this guy. Then we're going to flip him on the skin side. Once the flesh side is showing up, I've got a butter mixture over here that's got some beer butter and onions and garlic salt in it so I can brush that fish down throughout the cooking process. If you notice, I've got these dials cranked just above the off position. I don't want a really intense heat for this fish, but it's hot enough to cook on. So now we'll shut the lid here and get some of that good smoke kickin'.
 
To go w/ salmon, stuffed pepers

Stuffed Peppers Recipes

1 lb ground beef

1 can tomato sauce

1 c water

1/2 tsp garlic powder


salt and pepper to taste

1/2 c rice

4-6 green peppers

1 onion


Brown ground beef and onion in skillet. Add tomato sauce and water. Sprinkle garlic powder, salt and pepper over mixture. Simmer for 15 minutes. Cook rice according to instructions on package. Add rice to ground beef mixture. Clean peppers and sppon mixture into peppers. Place in roasting pan with 1 inch water in the bottom of pan. Bake in 350 degree oven for 1 hour with lid on pan. Then remove lid for 10 minutes.
 
Another quick grilled salmon recipe: Pour some lemon juice on fillet and immediately season salmon with Lemon Pepper Seasoning, Mrs Dash, and cayenne pepper (red ground pepper).
 
If you want a wonderful and EASY salmon dish on the grill try this:

Take a nice thick salmon filet and leave the skin on.

Place skin side down on a piece of aluminum foil (DO NOT SPRAY THE FOIL)

Chop some garlic and cover the filet with it. Season with dill weed and a little kosher salt.

Place the foil on a preheated grill and grill for 10 mins. After 10 minutes splash the filet with some lemon juice. Grill for another 5 minutes and splash some more lemon juice on the filet. After another 5 minutes (20 minutes total) you should see the filet starting to lift off of the skin on the corners. Slide a large spatula between the skin and the filet. If it's done, it will slide right off of the skin.

Excellent salmon and no mess to clean up. Just toss the foil in the trash!
