First of all the only time I can get to the gym is at night... like after 8pm do to work and family obligations. So, how should I structure my diet?

Also, I'm in a bit of a between place in my development. I've just leaned down about 70 lbs of fat and I'm ready (mentally and emotionally) to start stacking on some muscle but don't want to add back fat. I've seen a few diets that might work but I'm thinking I should go over 2700 calories.

Oh yeah, 5'8" 175...

I don't think you're diet should be that much different if you're working out at night except if you have a post workout meal you'd have it then. No big deal.
 
I find it hard to eat a meal after late night SFW. I'll smash a whey shake, then 30min later down a full meal, but it's really half sized portion.

What you can do is have a full-cream milk with whey shake in the fridge, everytime you get up for a wee-wee slug some back.
