So I had an opening in my client list, and I have potential clients in a folder as I take them first-come-first-serve. I haven't had an opening in seven months, and finally was able to dip into the pile. I called up a lady and after waiting for over six months, she was pretty happy to hear she could get in. Well... she's a Vegan. I'm not, in my honest opinion, thoroughly qualified to advise on the nutritious fare of a Vegan diet. I've worked with vegetarians, but this is a whole new ball game. I had to turn this woman away from being a client, but it piqued my interest.
Does anyone have any handles on muscle building vegan meals? The carbohydrate portion isn't difficult to assess, but quality proteins from soy is a rough sell IMO.
