Ingredients:
-2 carrots, peeled and diced
-1 medium turnip, peeled and diced
-1 rutabaga, peeled and diced
-1 parsnip, peeled and diced
-1 chopped onion
-2 cloves fresh garlic
-1 tablespoon fresh parsley, finely chopped
-1 tsp. olive oil
-3 cups water
-1/2 tsp. sea salt
-1/4tsp. pepper
Directions:
- Heat a large non stick skillet and sautee the onion and garlic on olive oil.
- Add the turnep and parsnip and continue to sautee for 5 minutes.
- Add the carrot and sautee for 3 minutes.
- Add the water and bring to a boil.
- Cover and simmer for 30 minutes or until cooked
- Serve hot and garnish with fresh parsley and pepper/salt.
