I actually find it difficult to eat my required daily intake of vegetables everyday. Lately I have been substituting steamed veggies by making a large vegetable soup each week and pumping it full of good stuff like broccoli, collard greens, celery, carrot, onion, parsnip and whatever else I can get my hands on.
I have 2 large bowls each day and it helps with keeping me full as I'm on a low carb/calorie deficit diet trying to cut.
Basically Id like some opinions on whether this is a suitable alternative to eating steamed veggies each day and whether I would still receive the same nutrients.
Any opinions would be appreciated.
