Whats the differences between.......

I've always worked out with basically the same type of workout, I do switch up doing different exercises every 6-7 weeks or so but I always lift as much as I can comfortably for 8-10 reps 3-4 sets.I have read that you should do mostly hypertrophy work and occasionally switching to strength work and also endurance work to avoid hitting plateaus. My question is what is the difference between "hypertrophy", "strength", and "endurance" work?

1-Hypertrophy work is increasing the size of your muscles/muscle cells.This is accomplished by targeting the IIa muscle fibers.Moderately heavy weights,6-12 reps and short rest intervals.
2-Strength work is the increase of nueral adaptions in the muscles.This is accomplished by targeting the IIb muscle fibers.Heavy weights,1-5 reps and long rest intervals.
3-Endurance work is the increase of mitochondria(energy source of muscle cells).This type of work targets the type I muscle fibers.Low weights,20+ reps and no to low rest intervals.
This is just the training aspect of the three categories.You have to keep in mind that the diet,training volume and frequency of exercise are also factors to consider.
