Makes 2-3 servings
2 chicken breats
1 chopped onion
2 garlic cloves
2 cans of diced tomatos (make sure to check the label and get one low in carbs/sugar)
Fresh chopped mushrooms
Chopped cilantro
Chopped fresh basil leaves (about 6 leaves)
2tbs Extra Virgin Olive Oil
Box of wheat penna pasta
Oregano
Salt and pepper
1/2 cook the penne pasta
Combine onions, garlic, cans of tomatoes, mushrooms and oilive oil in a sauce pan and cook. Add in cilantro, basil and oregano.
Place chicken breasts in an oven-safe dish. Add penne pasta and pour sauce on top.
Cover and bake at 425 for 1 hour.
