heating Flax Oil to Fry EGGS

low smoking point causing it to turn rancid.
 
Yeah I remember HAN saying how he screwed something up in his body by heating flax seed oil in the microwave. This is the thread. I really don't know why it is bad though.
 
Heating flax oil damages the fatty acids and releases the free radicals and acts as harmful transfats in the body.
 
Is it ok to fry egg whites using vegetable/ olive/ toasted sesame oil?
I eat about 10 egg whites daily using this fried method, never really questioned that it could be bad?
 
Stick with the olive oil don't use sesame oil. If an oil has a significant amount of omega 3's then you should NEVER cook with it and you should keep it stored in your fridge.
 
Ok, thanks a lot Jodi, why not the sesami oil though, it seems to be used a lot in chinese cooking? Does it lack the Omega 3's, that olive oil has?
 
Jodi, I was under the impression that coconut oil was a good choice to cook with because when cooked at high temperatures it does not create trans fatty acids. Is this not true?

Sesame oil is relatively high in polyunsaturated fatty acids, which are easily damaged when exposed to heat and light.

You want to cook with oils that are NOT high in polyunsaturated fats.

Yes, coconut oil is probably your best choice for high temperature cooking. Reason being is because it's a saturated fat and sat fat's won't change molecules while heated. Coconut oil is also an MCT (medium chain triglyceride). Your body absorbs MCT's as a whole and they are not broken down so they are immediately accepted into the liver to be used for energy.
