To be most accurate you need to have someone do the skinfolds for you. I sometimes do my ab and chest just to see where Im at millimeter-wise. My chest is always 5mm, so if it goes up, I know Im getting fat. :)

Oh... the tape measure is a horribly unaccurate form of measuring bf%. Does your trainer not know how to do bf%? It is rather easy and you could teach yourself, pickup the ACSM handbook, its pretty handy.

Try the sodium thing and if you keep it constant you will stop gaining H2O after about a week and then you will see your true gains (well fat and muscle, but not H2O).

I have never been a cardio fan. You will probably want to punch me in the face, but in HS I ate whatever I wanted (4000+ cals) and didnt gain fat. I just lifted and stayed around 7-8%. Now that I am doing BB shows I have to do cardio and I find that things...
I say eat more because you are 5'11" and 145 and 19. I am guessing your metabolism is through the roof and with your cardio... 3100 isnt enough.
As far as H2O gains go... Watch your sodium intake... try to keep it constant from day to day and week to week.
I train at most 3-5 working sets for biceps... they grow like weeds in topsoil.
Keep in mind they are a small muscle and are recruited for many other movements.
