For my Back workout (excluding Shug work), I'll perform 4 sets of Pulling movements (Chins and Pulldowns), 2 sets of Rows, and 2 sets of Deadlifts. Should I increase the amount of sets for Deads?

Put your all into those two sets and that is all you need. I NEVER perform more than 2 "working" sets per exercise!

I think if your doing them at the end of your workout that 2 should be fine as your back should be fully warmed up for it.

Sometimes the simple advice is the best. I couldn't agree more.

You are a wise man Neil ;)

because Deadlifts work so many muscle, and you need to have strict form for it, I only do 2 sets. More then that and their is a good chance of injury.

Are you only doing 2 sets or do you mean 2 working sets? If so, how many warm-up sets do you perform first?

Well, I can't speak for others, but I do only 2-3 work sets max...I do about 3 warmup sets to reach my first working set.
