From my understanding, range of motion is significantly better on db exercises (ie. the dumbell press, which allows you to stretch the pectoral muscle much better than the barbell press) and they require greater use of ancillary muscles (ie. keeping the dumbell from rolling, swaying, or falling; stabilizing).
Diet is better for definition. I dont use dumbells in very much of my workout other than biceps, triceps and delts. For major bodyparts I use the barbell, but thats just me and everyone here has differing routines. Many people will use BOTH and switch off at regular intervals, or randomly.
I prefer barbells in general, but I switch a decent amount of dumbell work into my routine. This is partly because I workout at home and have a smaller variety of exercises to choose from, but also because it is a good change of pace.
i believe bd are better because you work both muscles equally instead of a bb in which you have one muscle doing a slightly little more amount of the work
