BBQ Tofu Supreme
8 ounces firm tofu, drained and cut into 6 slices
1/2 cup fat-free BBQ sauce
2 tablespoon vegetable broth or water
1/4 cup chopped green onions
1/4 cup sliced black olives (optional)
Preheat oven to 400 degrees. Place tofu in baking dish sprayed with cooking spray. Cover evenly with BBQ sauce. Add broth or water to side of baking dish. Top with green onions and olives, if using. Bake uncovered for 30 minutes.
