Best flour to make bread?

I am going to try and make some healthy homemade bread. Even the wheat bread in stores seems to have crap that I don't know about in the ingredients so i'm going the homemade route.

I don't know which flour would be the best to use to make the bread though. I've looked up several recipes and some request whole wheat flour, bread flour, all purpose flour etc. I know all purpose flour or whtie flour is out of the question but i'm not sure about some of the others. Also i'm not sure if some of the better flour that might be listed can be used to substitute for things like bread flour. I don't even know what the heck bread flour is.

I know i'm going to use oatmeal and some form of healthy flour but I need some help with it.
 
use oat flour. i am not sure how it will apply to making bread. Are you going to use a bread machine, and can you post the recipe and how you are going to prepare it. I am thinking aboutdoing the same thing
 
buckwheat flour is good
 
Has anyone tried making bread without the machine, just in a pan?
 
never works for me,,, always mess up,, it comes out like rubber inside after baking !
 
I made some bread with the machine today, came out very very good. I think it would be good for bulking.

1 cup Oat Flour
1/2 Cup bread flour
3/4 Cup Whole Wheat Flour
1/2 Cup Oatmeal
7/8 Cup Milk
1/2 Cup Water
2 Tbs. Honey
1 Tbs. Butter
1 Packet Yeast
1/8 cup wheat germ

The Oat flour is just 100% whole grain oats ground up very finely so I imagine the bread is pretty good for you. All of those ingredients makes about 6 slices. It's very high in fiber and very very low sodium :thumb:
