different planes of motion causing different movement at the shoulder joint and affecting the scapula stabalizers in a different way. do a search. there are a ton of threads on this.
i usually do pullups to target my lats, and chinups as a biceps supplement. i fidn i dont really use much of my back at all ina chin up. but yes, both are some of my favorite exercises.
