Easy Chicken Casserole
4 - 6 servings

Ingredients
16 ounce bag frozen stir-fry vegetables or broccoli mix
2 chicken breast halves, boned, skinned, cooked and cubed or 2 cups cubed, cooked chicken or turkey
10½ ounce can reduced fat/sodium cream of mushroom or broccoli soup
4 ounces (1 cup) shredded reduced fat cheddar cheese

Method
Spray 9 x 13-inch pan with non-stick vegetable oil spray.
Place in layers: the vegetables, then chicken, then top with soup and finally cheese.
Bake at 350° for 30 minutes, or until vegetables are done, or cover and bake in microwave 6 min.

Nutrition Information
1/4 recipe = 227 calories, 23 gram protein, 11 grams carbohydrate, 9 gram fat, 523 mg sodium

Exchanges = 3 meat, ½ carb choice (or starch), 1 vegetable
