for those who eat harboiled eggs - HELP

once and for all....please tell me. does anyone have a method for cooking hardboiled eggs where they hardly ever end up with half the egg coming off with the shell when it comes time to peel 'em?

so frustrating! i swear i cook them the same every time and some days i have no problem peeling them and other times i literally lose about half the white with the shell.

i want to believe there's some secret that can change my life.
 
I boil mine for 15 min.
Drain water from pan
keep warm/hot water running in sink
take one out of pan......roll it against the sink to get an even crumble crack.
peel it under warm water.

For me that helps keep my egg together and gets the slimy part of the shell off.
 
Hard Boiled Egg instructions:

1.) After you buy eggs let them sit in fridge for a few days.
2.) Put eggs in cold water, put on burner, turn heat to high.
3.) As soon as water reaches boiling point, turn down heat so they are at a "calm boil" (just little bubbles).
4.) Set timer for 12 minutes right when water reaches the boiling point.
5.) When timer goes off, immediately run cold water in pan, dump out and repeat until water is cool.
6.) Let them sit for around 20 minutes, then put them in the fridge.

i should eat the yolk as well?

i would also like to know how long that could be kept, boil in advance, no time in the morning
 
i do exactly what prince said 'cept i turn off the heat and cover them when they reacha full boil then i let 'em sit 20 minutes.
i do the cold water rinse too.

i'll try leaving the heat on low for 12 minutes instead of turning it off and covering for 20 and hope for the best. i HATE when i can't peel 'em

thanks babsie - but i boil ahead to eat them the next day so maybe that's part of my problem
 
i mean, kept in the fridge stored. it is OK to have them there how long?
 
i recently read hardboiled eggs could be kept for 7 days.

(by the way...i know i had easter eggs as a kid that lasted longer than a week. i ate 'em and lived to tell.)

so a whole boiled egg, with yolk, is a good breakfast for a high protein/low carb diet? because i need to start the day off right with something better
 
A lot of good ideas have already been presented. This is a link I found interesting on the subject. Also, you can help them age more quickly by keeping them out of the fridge for a longer timeframe. Not sure if it is accurate but I think leaving them out ~24 hrs is about like leaving them in the fridge a week. It is tough to make an egg spoil. So much easier to peel old eggs imo.

I thought it was Jodi or someone who boiled the water then dropped them in, instead of a slow heat? Maybe I am wrong on that.

What Prince said; for cooking and consuming those eggs. If low carb is not absolutely essential for you, I would suggest a bowl of oatmeal with your eggs and you'll have a well-rounded breakfast. This breakfast will not cause in increase in bodyfat.

I haven't perfected it yet, but I'm working on a process to make golf balls out of the extra egg yolks. :D Any better ideas for using the yolks?

You can still do that and store them. That's what I do. I only make them two days in advance.

No way...you want to put them in cold water when you start out....let it heat from there.
 
they're hard to peel because your overcooking them. bring them to a boil....let them boil for 7 minutes.....shut off burner and let sit another 5 minutes.....rinse with cool water and peel right away. perfectly boiled eggs with the shells coming off in only one or two peices. hope that helps.:thumbs:
 
i think that may be it....i'm cooking them too long.

one more question. i always start in cool water, bring to full boil then shut off the burner, cover and let them sit. (too long)

for those that let them boil for a time don't the shells crack?

I like to bring the water to a boil and then with a spoon lower each egg into the boiling water and let them boil for 10 minutes. After that I place the pot in the sink and pour off the hot water and flood the inside of the pan with cold water and let the eggs sit in the cold water for 5 minutes or so. I usually do 3 or 4 like this each morning to take with me for snacks during the while away at work. They peel really well and the egg never falls apart and the yolks are solid.

Run cold cold water over them for about 4 or 5 minutes and they will slide right out of the shell :thumb:

**Oh, you have to boil them for about 10 minutes first, hehe

If you put them in pickle juice they can last for a good week, I wouldn't chance it after that :D

Even if they crack open it does nothing to the egg, it still comes out hard boiled, put the eggs in a pan, cold, warm or hot water, doesn't matter, cook 10-15 mins, closer to 15, drain off hot water run under cold water (5 min.), peel and eat, haha;)

Seriously I've cooked eggs forever it seems like, it's the way every Chef in my family has done it :shrug:

They don't crack if you do this, eggs are very hardy, LMAO :grin:

Prince had the rite idea for the cooking part. Thats a true "hard-boiled" egg. A few mins less is "medium" and a few less that that is "soft". Once the 12 minutes are up simply take them to the sink, run cold water and crack the entire egg. Peel the whole thing rite away because it is still loose. If you do not peel them and put them in the ice box kiss em good bye. They never peel properly.

They can stay about a week or so and still be fine. I do it all the time. As for letting them boil when in the pot, you never want a rapid boil. You want to keep it at a simmer (little bubbles but not enough to move the eggs). This will make sure your eggs stay whole. Hey dont sweat broken eggs either, just consider them poached.

i cooked them a little less than i had been and
i soaked 'em in cold water after cooking instead of just rinsing.
 
I do exactly what Daver does and have never even damaged the white while takig off the shell
 
I always rinse in cold water immediately after boiling for 15-20 minutes. The only time I had tourble was when I use medium eggs insted of large.
