I was thinking of grinding a large amount of flax and just leaving it in my fridge so i could spoon it out whenever i needed. But my mom (laugh it up people ;) ) told me that ground flax goes rancid very quickly. If this is indeed true, does something going rancid affect the nutrient value at all?

... ... I... Okay, first off, its okay to leave it in the fridge, as long as your fridge is freaking cold. Flax oil will spoil much faster than the ground seed, so, you should be okay. And yes, spoilage greatly affects the nutritional value.

you should be able to find Bob's Red Mill Whole Ground Flaxseed Meal in most food markets, very cheap and easier than making your own.

You can grind up a heap (maybe 1 pound at a time) and leave it... This will be fine - If it is in the fridge then it will not go rancid quickly (that is the point of leaving it in the fridge). ;) [as long as you use it in a reasonable period].

And yes, 'going rancid' will change the nutritional content of the flax... so I would stick with non-rancid food! :p

how long would ~1lb last before going rancid... 4 days? a week? 2 weeks? a month? just a rough estimate?
