Help with HIIT

Hi there. Im having a few problems and queries with my HIIT training heres the deal.

Im on a 5 a day meal plan, I am on a lower carb intake and I'm currently through a weight training drop set plan trying to lose my belly fat and try and retain some muscle.

I wont lie im on holiday in 5 week and have only done HIIT for a week so far, how can i speed up fat lose off my stomach? diet and training wise?.

I always do HIIT running after training so thats 3 times a week

typical
3 * a week

warm up, run @ 80% of my max for 45 seconds then fast walk for 1min 45 seconds and repeat for 6-8 rounds.

a sample of my diet
Wakekup 7am - porridge and scramled egss
10am - protein shake and apple
12pm - tuna sandwich, brown bread brown pasta etc
3pm chicken and yoguart
5pm peice of steak and cottage cheese
7pm protein shake
10pm bed
