It is such a shock to your body the first time that you do it, all kinds of metabolic processes go crazy and kick into overdrive in an attempt to adapt. That's just the nature of the beast. Once you have been doing it for a while, your body has already largely adapted to the stress placed on it, and progressive overload becomes continually harder to implement. This is one reason why periodization becomes so important later in your training career.
If you are having trouble gaining weight, then just increase your caloric intake a little bit. Those numbers in Jodi's article don't work for me either. I have been losing weight a little bit recently eating about 3800 calories each day. I'm down to about 192-193. So, maintenance for me at the bodyweight is about 20 calories per pound of bodyweight. There is trial and error involved.
