is there a slowburning substitute for flour in recipes?

i was wondering if anyone knows about a substitute for flour in pancakes, muffins etc., besides soyflour? something that is low GI and possibly lower in carbs too? what is arrowroot flour or chestnut flour like? i've seen these in a health food store.
 
I really depends on each recipe, sometimes you have to do a bit of mixing....I have used oats, soy flour, rye flour, ground flax seeds, ground almonds/pecans, etc. ....not all things work, for instance, ground almonds will sub for flour in cookies (not that I would know that :grin: ) but really wouldn't work in pancakes.
