Jamaican Chicken

1/2 tsp cinnamon, ground
1/2 tsps allspice, ground
1-1/2 tsps black pepper, ground
1 Tbsp hot pepper, freshly chopped
1 tsp dried hot pepper, crushed
2 tsps oregano, crushed
2 tsps thyme, crushed
1/2 tsp salt
6 cloves garlic, finely chopped
1 cup onion, puréed or finely chopped
1/4 cup vinegar
3 Tbsps brown sugar
8 pieces chicken, skinless
(4 breasts, 4 drumsticks)

Preheat oven to 350° F. Combine all ingredients except chicken in large bowl. Rub seasoning over chicken. Marinate in the refrigerator for 6 or more hours. Evenly space chicken on nonstick or lightly greased baking pan. Cover with aluminum foil and bake for 40 minutes. Remove foil and continue baking for an additional 30 to 40 minutes or until the meat can be easily pulled away from the bone with a fork. The drumsticks may require less cooking time than the breasts.

Ok so I read the recipe and saw this,Marinate in the refrigerator for 6 or more hours.so I got dressed for the task at hand,but after marinating IN DA FRIDGE for 7hrs I came out of da fridge and looked like this

I'm sure it will taste good,but I got a cold from preparing dat dish,I don't think I will be preparing it too often...:rolleyes:

If I don't have allspice can I substitute it with all my spices (That I do have)?

Dero's right. There's NO Substitution......for the real thing, but if you don't have it make it.
