I object to the low-carb craze because I hate the idea of denying myself something.
Fast metabolism or not, (hardgainer of the worst kind here) in order to "properly" gain weight I already am more or less banned from eating pizza, enjoying hamburgers and hot dogs, fine french bread, lots of potatoes, and worst of all, banned from drinking Guinness. Now to any good Irishman, that's freaking punishment enough.
The idea of TOTALLY removing all carbs would frustrate me to the point of saying "fuck it all" and eating whatever I want, and results be damned. I've never been fat, but I think low carb would make me not give a damn, and try my best to go there.
I eat about 6 to 9 slices of "sprouted-grain" bread a day - it's not made with flour, but literally with grains that were soaked in water and sprouted. It's as natural and low-GI as almost any other whole grain product such as brown rice and allows me to at least enjoy some toast, or a sandwich with a couple of meals during the day.
Substituting healthy food for preferred "poor" food is always better than removing it completely I say.
