Oatmeal Apple Muffins

1 Cup Whole Wheat Flour
1 Cup Rolled Oats
1/2 tsp. Salt
3 tsp. Baking Powder
1/2 tsp. Nutmeg
2 tsp. Cinnamon
1 1/2 tsp. stevia
1 Egg
3/4 Cup Milk
1/4 Cup Oil (or 1/4 Cup Applesauce)
1 Medium Apple Cored and Course Chopped
3/4 Cup Raisins

~Preheat oven 400 degrees. Mix first seven ingredients thoroughly. In separate bowl mix remaining ingredients. Gradually mix dry ingredients into moist ingredients. Spoon into greased muffin tins. Bake 15 to 20 minutes.

*you could also used that carb countdown milk instead of regular milk if you wanted! :cool:

for the exact recipe above (used skim milk and sunflower oil)
each muffin(12 per batch)
148 cals
5.6g fat
22.3g carbs
2.6g fiber
3.8g protein

OR. if you substitute the oil for 1/2c unsweetened applesauce and lower the raisens to only 1/2c each muffin has:
102 cals
1.1g fat
20.6g carbs
2.6g fiber
3.6g protein

Instead of the ww flour, do you think I could grind up some oats and use that instead?

Jill - I think that would work as well. I wouldnt grind the 1cup of whole oats required though. but you could defintly try 1cup ground oats instead of the flour. :)
 
Would you grind the oats, then measure 1 cup? Or measure 1 cup of oats, then grind? I think probably grind then measure.

but I would measure how much you grind. then workout the nutritional info to accomdate the changes.

okie here is the nutritonal info for the recipe made without raisens but with oil:
117 cals
5.6g fat
14.3g carbs
2.3g fiber
3.5g protein

Made these, yum-me! Used skim milk and apple sauce. Instead of the ww flour, I took 1 cup of oats dry, then grinded them up in the blender. Nixed the raisens-if I had them left over hanging around the house Id just eat em! I did the math and it worked out to be about 13C each, around 1P, min fat!

Very good-the only thing is I wanted to eat 5 instead of 1!!!:grin:

so you didnt use 1 level cup of grinded oats? just grinded 1cup of whole? how much grinded did that come out to be?
hmm well for 13carbs you could easily eat 2 in a meal! :lick:

How about 4?:p
I just grinded 1 cup of dry oats. That equaled almost a cup after shredded.

can I use splenda in place of the stevia? how much splenda would I need to use?

you can use either 1/4cup OIL or 1/4c. applesauce! :)

this makes 12 muffins!

I made 6 nice biiiiig ones!! yummiessss!!

Jen I added 2 scoops of vanila protein powder, and used 100gm of WW flour and 100gm or oat flour, everything else the same ( used olive oil tho), very filling but delish ( i guess it's also filling cz one of my muffins is 2 of yours!! :laugh: :laugh: ).
