Quick Veggies For Increasing Carbs

My Feb calculations for carbs are LOW. I'm finding that I need to lower my fat intake and increase my carbs. I especially need help in the "fibrous carb" area -- veggies just seem hard to get at.

This is probably a stupid question, but whatever: Have any of you found some "quick tricks" for preparing veggies?

I'm just not the kind of guy who buys, spends time preparing, and then consuming. I'd rather just eat a bunch of brocolli raw. My 9-5 job + commute + family/small children just don't allow me to get too anal with veggies.

Need something quick to fill the gap.

Curious how others get creative and do this.

Or am I out of luck and I have to get the dicer out?

Kale - chop it up as if for salad, toss into a frypan, shot of water, high heat, cover, steam for a minute. Drain, serve with butter and salt.

Same method works for broccoli or cauliflower, but three minutes instead of one.

Spinach: prewashed cooks up like kale.

Cabbage: slice it thin right off the head. Cook like broccoli.

Green beans: get the kids to snap off the stem ends. Cook like broccoli (the beans, not the kids...), but for seven minutes instead of three.

PS none of these is high in carbohydrate - if you wish to increase your carbs through veggies, may I suggest lentils and pulses? Also baby carrots; frozen peas.
 
ahhh...steaming. This could be good.

It may not be much, but I need to start integrating veggies consistently. My diet has been a mess.

First, afraid to death of carbs. Fixed that.

Next, been avoiding breakfast for years. Fixed that.

Now, I need to bring my protien up a tad and balance the fat vs carb situation.

This is in progress.

Set a timer when you use this method. They cook VERY fast.
