They're a source of protein that is easily digested and has a moderately slow absorption rate in the gut - when cooked. Raw eggs have about 1/2 the absorption rate of cooked eggs. Egg whites are pasturized and don't bear the same risks for salmonella poisoning that raw whole eggs carry when used in shakes.
