I have a bunch of brown bananas. I need a 'healthy', well somewhat healthy banana bread recipe. Anyone? AJ?:D
 
I have a PB Cookie recipe that requires mashed bananas. Its at home though. I can post it later.
 
MMM....Banana Nut bread......use splenda instead of sugar. No getting around the flour in the bread. (I don't think anyways)
 
I've never tried ground oats instead. I always use flour. I can't help it..when I'm bad...I want the real thing.
 
1/2 oats and 1/2 WW Flour makes a good combo for baking ;)
 
How about just the oats? I tried that in AJ's muffin recipe and it seemed to work fine.
 
Oh I'm sure that is fine too. I just prefer the taste of the mix :)
 
I always use Whole wheat flour when Making my bananna nut bread!!

I was cruising johnberardi.com the other day, and this Banana Flax Loaf looked rather decent. Too late for your bananas I expect, though, Jill! (You know, you can always peel them, put them in a Ziplok and freeze them for future reference.)

Banana Flax Loaf

The tastiness of this treat increases exponentially with the amount of Splenda and oil that you put in it. The ingredients below have modest amounts of each, to avoid too many carbs and a larger than normal fat-protein ratio. But don???t be afraid to tweak the ingredients to get the desired taste.

Ingredients:

4 scoops vanilla or chocolate protein powder
½ cup flax meal
½ cup granulated Splenda
1 teaspoon baking powder
¼ teaspoon salt
1 oz chopped walnuts
1 jumbo whole egg + 1 egg white, beaten
2 tablespoons olive oil
1 ½ teaspoons banana extract
¼ cup water
Instructions:

Set the oven to 350 degrees.
Stir all of the dry ingredients together in a large bowl, then add the oil, water, eggs, and banana extract and mix well.
Coat a 4X8-inch casserole dish with cooking spray, and pour-in the mixture.
Sprinkle some whole flax seeds over the top and bake for 25 minutes at 350 degrees (don???t over bake or it will become dry).
Makes 4 servings.

Fat: 21 g (3s, 8.5m, 8.5p)
Carbs: 13 g (4 fiber)
Protein: 30g
