Pumpkin Pie

1 FF Crust (your choice, either from store or one from above)
1/2 C. egg beaters
2 C. canned pumpkin
1/4 C nonfat dry milk powder
1 1/2 tsp cinnamon
1/4 tsp nutmeg
2 C evaporated skim milk
FF Cool Whip (optional)

Combine egg substitute, pumpkin, milk powder, cinnamon, nutmeg and evaporated milk. Mix until all ingredients are blended smoothly. Pour mixture into pie crust and bake in preheated oven for 15 minutes. Lower oven temperature to 375 degrees and continue to bake 40 to 45 minutes, until knife inserted comes out clean. Top with FF Cool Whip, if desired.

THE BEST Graham Cracker Crust

Crust:
8 FF Graham Crackers
2 T. Sugar
2 T. Egg Beaters

Break crackers and place in processor, make fine crumbs should be 1.25 C. Return to processor add sugar and egg and mix til crumbly. Coat 9" pie pan with spray and press crust in, bake at 350 for 8 mins.
 
FF Carrot Cake w/ Cream Cheese Frosting

:eek2: OMG How could I forget this one. One of my favs :nanner:

Carrot Cake:
3 C. Flour
1.5 C. Sugar
2.5 tsp. Baking Soda
2 tsp Cinnamon
1 1/3 OJ
3/4 C. Egg Beaters
2 tsp. Vanilla Extract
4 C. Grated Carrots (approx 8 carrots)
1/4 C. Raisins

Cream Cheese Frosting :lick:
1 C. FF Cream Cheese
1.5 C. FF Ricotta Cheese
1/2 C. Sugar
1 T. Lemon Juice
1.5 tsp. Vanilla Extract
2 T. Instant Vanilla Pudding

Combine flour, sugar, baking soda and cinnamon and mix well. Stir in OJ, egg beaters and vanilla extract. Fold in carrots and raisins. Coat a 9x13" pan with spray. Spread batter evenly in the pan and bake at 300 for 50-55 mons. test to make sure center is cooked. Cool

Place all frosting ingredients except pudding in a bowl or processor and mix til smooth. Add pudding mix and process just until the frosting is mixed well. Spread over COOLED cake and refridgerate

FF Eggnog

1 Quart Skim Milk
1 C. Egg Beaters
1/4 C. Sugar
1/2 C. FF Instant Vanilla Pudding
3 tsp. Vanilla Extract
1/2 tsp. Nutmeg

Place all ingredient in a blender and whip for 60 sec. Chill for several hours. Stir before seving

10 Servings.

Jodi- Do you REALLY eat this stuff!! I always read your comments about sugar. You are like soooo against sugar. Am i missing something here??

Hey Jodi, I saw some low carb bagels in Hi-Health store, 5 grams carbs per 1/2 bagel... they look great
