if you do these on a bench that has a back on it, how is this different than doing this movement seated on a bench with no back? What effect does this have on stabilizer muscles, and would it be fair to say it is kind of "cheating" to support your back against the pad and press as opposed to just pressing?

you will have to stabalize yourself more without a back support. It will place a greater demand on your core.

If I don't use back support, then I have to do overhead pressing movements standing. They just don't feel comfortable seated without a back support. I have a naturally tendancy to arch my back a little bit to try and mimic horizontal pressing movements. It's really hard for me to control this.

I prefer support

Maybe try a little less weight when doing shoulder press with no upper back support.
