this is pretty basic but works great with my budget, schedule, and lack of kitchen skills. :thumb: i had it tonight!! :D

1/2C brown rice (i use kroger brand)
6oz chicken (i use tyson frozen breasts in the bag)
1C beans of some sort (green, kidney, black, pinto, are my faves.)
1TBSP miracle whip light/light mayo
2TSP low sodium soy sauce (kroger brand here too)
flax oil if desired

cook the chicken breast (i just put a frozen piece on the foreman), cut it into pieces. microwave the rice. add the chicken, beans, miracle whip, and soy sauce. mix together. put back in to microwave for 30 sec. and stir again. done! (about 490 cals w/ flax oil, 390 without)

-u can mix this up a lot too. add whatever you want. (peanuts/almonds are yummy) if i dont want all the carbs i will keep the chicken but use frozen veggies and salsa instead of rice/soy.

-or make a wannabe burrito out of it w/ a WW/low carb tortilla.

-and it's good cold so i'll make a few servings and use throughout the week. :blah:
 
This is pretty similar to what I do for lunch (OK, sometimes breakfast too, when I'm rushed.) I keep Uncle Ben's microwave rice pouches in my desk, as well as the large foil packs of salmon, chicken and tuna. One of those over the heated rice, a little worchestire and I'm ready to go for another 3 hours or so.
