straight sets for strength?

I'm looking to add a little strength to my main lifts like deads, squat, incline, etc. I'm currently doing a full body split 3 days/week:

monday I do lower body power (cleans, snatches) and uppper body hypertrophy(2 pushes, 2 pulls).
Wednesday I do upper body power (plyo pushups, push press) and lower body hypertrophy(2 quad, 2 hip)
Friday I do full body strength (3-6 reps).

I'll use deadlifts as my example. Would it be better for strength to do say 3 sets of 5 with 365 or would I be better off adding weight every set and going for a maximum for one set of 5 (ie.315x5, 350x5, 385x5)?

You could alternate it such that you aren't always using the same intensity. You could even alternate it such that one week you go for a 5RM on one or two exercises while the others you use your 7RM or so with to maintain the same weight over all three sets, and then switch which exercise you go balls out on the following week. You don't have to stick with any one method alone.
