Tha jeepster's pumpkin pancakes (finally got it right)

Not to say that Jodi's pancakes arent great, but heres my recipe, a little less carbs and more protein.

Try these bad boys out, go ahead and alter for more or less pancakes, this made 8 3-4" pancakes. Very good.

1/2 cup pumpkin
1/4 cup cc
1/4 cup oats
1 scoop whey, I used isopure vanilla...
1/4 tsp baking powder
4 egg whites
add splenda and pumpkin pie spice to taste.

Mix all ingredients in blender til smooth. Spray some pan on a skillet and cook em up. Makes 6-8 3-4 inch pancakes. Add some SF jelly and syrup. MMM good. If batter gets too thick, add a little water.


Macros (not including jelly and syrup) : 300 cal 43g protein 2g fat 28g carbs 8g fiber

Today I increased it to 1.5 of the recipe and had it as a whole meal. Damn thats good stuff.

I may try it later without the pumpkin, maybe 1/2 cup cc and 1/3 cup oats to make normal bb pancakes.

I cant stress the baking powder enough, otherwise you get thin soggy pancakes that have no fluff at all.
 
My version:
1/3 OR 1/2C oats
1/4C pumpkin
2 ew's
1 scoop vanilla protein
1 pack splenda, 1 stevia
1/2 tsp-1 tsp: baking soda, baking powder, cinnamon, molly mcbutter, pumpkin pie spice

Let oats soaks in boiling water for apprxo 5 minutes. Drain excess water. Mix all ingredients in a bowl.(no need to blend) Cook in a non stick pan sprayed with pam. I make 1 BIG pancake:D

Variations:
Nix the protein and 2 ew's, and JUST USE 1C egg whites. Let the oats soak for about 15 minutes in the egg whites, then mix everything all together and cook.

a little bump, do you need to add the protein powder or is it merely to up the protein content?
 
no need, i used it for flavor, just up the cc and egg whites and you should be fine.
