Well, trying for the Six pack, which I've never had....and after losing 27 lbs. of fat, it's starting to show, but the fat loss is also starting to slow, so as I've said in past threads, I'm now tweaking....

I usually have a Whey Protein and Flax oil shake around 9, and a Casein (Micellean actually) shake with Flax right before bed.

If I change the 9pm shake from Whey to Casein, is that enough of a tweak to help a little? Or do these changes need to be much more drastic and across the board (change the shake AND change meal portions/foods, etc)

In my opinion shanging the shake (type of protein) around isn't going to help. If anything the casein is fine were it is, right before bed time, due to the fact that it digests slower than whey. If you are looking to tweak anything it has been my experience that changing your macros a bit (ie lowering carbs and upping fat slightly) and/or lowering cals will do the trick. Carb ups and refeeds also help alot to keep that fat coming off.

How long have you ben dieting for? When I cut for prolonged periods of a time I like to take a week of from dieting and eat back at maintenace calories. This usually helps to reset things and get your body ready for a few more weeks of dieting.

This thread may help you as well on tweaking

Tweak

Take a week off dieting. Taper calories up slowly each day so that by day five or six you're about 300kcals in surplus. Stick to it for another day or two and then slowly taper back down into deficit and resume dieting.

Unless you have a deadline to meet that is.
