Yes, you do burn fat at night, but you burn it all day long too. Any time you are doing any low intensity activity (Sitting, walking, talking, light jogging, etc.) your body is going to utilize primarily fat as an energy source. Glycogen tends to be spared for times when a more rapid supply of energy is necessary, such as when you are resistance training.
However, this is all for naught if you aren't eating in a caloric deficit because those fat stores will be resupplied if you take in an overabundance of calories.
