zucchini chips

Now that it's almost fresh home grown zucchini season and they'll be sproutin' a mile a minute, here's a simple low carb side dish.

slice up some zucs into 1/2" thick chips (optional = you can place them in a colander with some salt to get rid of the excess water)

pat them dry, place them is a bowl with the best extra virgin olive oil you can find, salt, pepper.

Then go directly to the grill and watch them so they don't charr up too much. And there you go !! nice crispy, tasty zucchini chips.

Now where's the dipping sauce :thumb:

i tried grilling some zuchini the other night and it ended up fallin apart on me and being all mushy... is it becuz i didnt have oil on them?

No, you might want to try the salt treatment though to get the water out and what you have to do is use a fish griller (the kind that fold on the food so you can flip easier) or a baking pan on the grill. And crank up the flame to make em a little crispy.

And here's a joke that anyone who has ever grown zucchini will appreciate:

A woman is visiting her friend in a small town. She's commenting on how nice it is to get out of the big city, away from the crime and pollution, when her friend warns her:

"Just make sure you lock your car door, especially in summer."

"Why is that?" the woman asks. "Does the crime rate go up then?"

"No, if you leave it unlocked, you'll come back to find a lot of zucchini on your car seat!"

Don't add to much oil..

i used to alwasy make zuchini strip, and chips at my old work (restarant) if u put in TOO much oil, it absorbes it making them soggy, so i found it better to place the chips , or strip on the grill, then use a brush to brush on the oil as they grill over a hot flame.
