Beef & Spinach Chimichangas

Ok, don't do this unless you are trying to pack on straight muscle, it IS calorie dense but packed with protein and will put meat on your bones!!

Ingredients:

- 2 lbs lean ground beef or ground turkey
- 8 oz fresh spinach
- 1 white onion, diced
- 1 6oz can diced green chiles
- 1 9oz can black beans
- 3 tbsp carne asada seasoning
- 6 XL flour tortillas (fresh from mexican bakery if possible)
- 2 cups low fat cheddar cheese
- 3 tbsp virgin olive oil

1. In a large skillet over medium/high, toss in ground beef/turkey and add carne asada seasoning and cook til red is gone

2. Once meat isnt raw any more, add spinach and stir. Wait 5 minutes and add chopped onions and green chiles

3. Once meat is browned, removed from skillet and drain excess fat from skillet

4. Heat black beans separately

5. Warm tortillas so they are soft/flexible

6. Fill tortillas up with beef/turkey and spinach/onion mix, top with a layer of black beans and 1/3 cup of cheese

7. Heat 2-3 tbsp of olive oil in a skillet, place folded burrito into skillet on medium heat for 2 minutes each side.

Enjoy!

Great meal for dinner after a grueling leg day or 2-3 consecutive days of intense lifting.

Great meal! I tried it with Buffalo and it's fantastic! BTW, Buffalo is the best meat ever!

I didn t know chimichangas were so east to make! Very delicious and light.
