bulking and cutting help to understand

Ok if im bulking im eating alot of chicken, white rice and weight gain drinks. Now do I keep consuming all that until i reach a desired weight? then start cutting or do i keep going pass the weight i want to be and then start cutting. And when I cut do i just eat less and switch to protien drinks and run cardio or keep eating the same and do cardio. thanks guys
