Egg White Omlet

2 tomatoes, diced
3 scallions, diced
1 dash thyme
Salt and pepper, to taste
4 egg whites
1 tablespoon skim milk


Coat a nonstick skillet with corn or olive oil spray. Sauté tomato, scallions, thyme, salt, and pepper for a few minutes on a medium heat. Lightly whisk the egg white with the skim milk and pour into the skillet. Cook for 3 to 4 minutes. This will come out like a frittata if you don't flip it.

I can never eat straight egg whites, i need a couple of yolks to get it past my mouth.
 
umm u can add a little touch of yoke not too much and ur set.. thats what i do when i eat 3 eggs...
