Just cooked up this recipe today
1.5 lb of bottom round steak
2-3 medium potatoes or yams
2 celery stalks
1 medium onion
2 carrots
1 can of no sodium tomatoe sauce
1/2 can of tomatoe paste
1 cup red wine or half a beer
1 tablespoon worcestershire sauce
1 tsp garlic
spices(not necessary if you don't have): Rosemary, Oregano, a bay leaf and some thyme.
cut up the bottom round steak into small 1in x 1in cubes
cut all vegatables to roughly the same size
Brown the bottom round steak in the bottom of a 2 gallon pot
Remove the browned meat and throw in the chopped onions
After onions start to get soft, put in the minced garlic, pour in the wine or beer and bring that to a simmer
Return beef to the pot and bring it all to a simmer again
Add in 1 cup of water, the can of tomatoe sauce and the tomatoe paste
put in your potatoes, carrots, celery(herbs if you have em) and let simmer for roughly an hour till the potatoes and the carrots are soft and the beef is tender. Add pepper or tabasco if you like it spicey.
Throw it into a bowl, maybe boil up some brown rice and you've got a delicious hot dinner.
should be appx. 4 servings
I usually double the proportions throw some of it into jars and toss it in the freezer so I always have some when I want it.
