LOW Fat Coconut Cream Pie

1 FF Graham Cracker Crust
1 envelope unflavored gelatin
2 C. Skim Milk
1/4 C. Flour
1/2 C. Sugar
Speck of Salt
1/2 C. Egg Beaters
Pinch salt
1/4 tsp. Coconut Extract
1/2 tsp. Vanilla Extract
1/2 C. Shredded Coconut
3 Egg Whites
1/4 cup shredded coconut
3 egg whites
2 tbsp. sugar
8 oz. FF Cool Whip

Combine the gelatin and 1/4 cup of the milk. In a saucepan, combine the remaining 1 3/4 cups milk, flour, 1/2 cup sugar and pinch of salt. Cook over medium heat, stirring with a wire whisk to make sure there are no lumps, until the mixture thickens and boils. Add the egg beaters, whisking constantly. Then add the extracts and the gelatin that has been softened in the milk. Stir well over the heat for a minute, add 1/4 cup coconut and set aside to cool.

In a separate bowl beat the egg whites until foamy. Add 1 tablespoon sugar, and beat until slightly glossy. Add the other tablespoon sugar and beat until peak and glossy.

Stir 1/3 of the whites mixture into the cooled custard to loosen it. Then add the rest of the egg whites and half of the cool whip and gently fold in, using a large spatula and trying not to lose any of the air you have beaten in. Pour into the cooled crust and refrigerate for at least 2 hours. Just before serving, top with the remaining whipped topping. Refridgerate

8 Servings
