Sweet Pickled Beaver

We at The Belly swear that we were surfing one day and found this honest to God recipe on the net (so you know it must be real). We wouldn't steer you wrong, so we verified that you can (snicker) eat beaver and although we admit we've never tried this one, we just had to include it so we could all share in the laughs as you read the cooking procedure.

Ingredients:
1 Beaver, skinned and cleaned
1/2 cup of vinegar
1 pound of salt
2 teaspoons of soda
2 tablespoons of dry mustard
3 tablespoons of mixed pickling spice
1 teaspoon of cinnamon
1/2 teaspoon of ground cloves
1/2 cup of brown sugar
1/2 cup of dry white wine or apple juice
1 cup of pineapple juice
1 juiced and grated rind of a lemon


Wash your beaver thoroughly with salt water, then let it soak overnight in enough cold water to cover, adding 1/2 cup vinegar and 1 tablespoon salt to the water.

The next day, remove your beaver from the brine. Wash and cover your beaver with a solution of 2 teaspoons soda to 2 quarts of water. Bring to a boil, reduce heat and simmer 10 minutes.

Drain and rinse your beaver, then place it in a clean pot. Add water just to cover. Sprinkle mixed pickling spice on top, bring to a boil, reduce heat and simmer 20 minutes.

Drain and rinse your beaver again, pat it dry and place it in a roaster.

Mix mustard, spices, sugar, wine and fruit juices and spread it over your beaver.

Cover and roast your beaver at 325 degrees F. until it is tender (or to your liking), basting it frequently.

Eat Beaver.

After boiling it twice and roasting it, there can't be any of the original flavor....so it must be pretty good.

It must be northern alright. I just thought those yankees were to sophisticated to invite a beaver to dinner. Could it be Canadian.....eh?

probably. here's one that i'm pretty sure is

Caribou Steak
By Chef Executive Belly David Lauterbach

What the hell is a caribou, and why would you want to eat one? Because you can. Rudolph was a red-nosed caribou, and what an annoying little bastard he was ('She thinks I'm cute'). He deserved to be eaten. Actually , caribou are more commonly known as reindeer. And in a way they are the freaks of the Bambi world, as both males and females have antlers. That should make for an interesting mating party. And we complain about cross dressers.

Ingredients:
16 oz Caribou steak
4 tablespoons of butter
1 chopped onion
2 tablespoons of sherry
2 tablespoons of brandy
1 tablespoon of Worcestershire
3 tablespoons of A-1 steak sauce
1 tablespoon of chopped chives
1 tablespoon of chopped parsley
Salt & pepper


Chop your onion, keeping in mind that you'll probably cry like a baby while doing this. Cook the onions in 2 tablespoons of butter until golden. Pound the caribou steak with a mallet to tenderize. If you don't have a mallet, a claw hammer is fine. That was a joke... do not use a claw hammer. Sear the meat over high heat in the butter & onions, about 2 min on each side should do.

Now add the sherry, A-1 sauce, the remaining 2 tablespoons of butter, Worcestershire sauce, chives, parsley, pepper and salt.

Reduce to medium heat and cook for an additional 3 to 4 minutes per side. Add the brandy, bring to the table, flame and serve.

That recipe sounds edible. I've never had caribou that I can remember. I lived up there in AK for 5 yrs and never et one.

I don't think it's a Canadian dish,looka here,the beaver is our national emblem after the Maple Leaf,of course...
So,we treat our beavers with dignity and respect...:thumb:
We would NEVER do that(what the recipe tells you to do:eek: )to our Beavers,
NEVER!!!!!:nope: :no: :nope:
 
Dero is right, it ain't canadian....we canadians know how to treat a beaver just right and cooking it three times is not right!.....though roasting rounds kinda neat :grin:

Sorry I didn't know Canadians were so attached to their beavers. Coming from Alaska, where the state bird (ptarmigan) is hunted with a limit of 20 per day, it didn't enter my mind that Canadians didn't eat beaver.:p

There's only one kind of beaver I like. I only lick it, no way would I cook it. Mind you theres no saying it wouldn't be getting :hot: :hot: :hot:
