thinking of thanksgiving

Hey all
Trying to plan ahead wondering if anyone has any creative low fat, sugar free
low carb recipes for thanksgiving meal planning ideas??

haha low fat sugar free low carb...you gotta cheat once in a while man! plus that basically cuts you down to some low fat turkey...no skin...no stuffing....no gravy...white meat only

yeah i know, sorry to rain on the parade. I know what its like too, and i have no willpower at all. I salute you for planning ahead although I cant give you any good recipes.
 
The turkey is a good bet, I am going to make some whipped sweet potatoes and cauliflower mash. That way I don't miss out on the whole mashed potatoes and dressing thing. The other thing I will make up is a oatmeal pumpkin bread, with a little touch of FF cool whip I don't miss the pie.

Oat Meal Pumpkin Bread
1 whole egg
2-3 egg whites
1/2 cup of oatmeal
1 cup of pumpkin or pumpkin pie filling (watch out for Dextrose)
dash of cinnamon
1/4 cup or to taste Splenda (or whatever sugar substitute you use)
dash of nutmeg
dash All spice
dash of ginger
1 tsp. vanilla
(should smell like pumpkin pie to you, if not keep adding spices till it does, but don't sample raw !)

Spray a small loaf pan and cook for 20 min at 350 F. Should have a clean center when done.
 
I put my healthy diet aside for Thanksgiving and GORGE. WTF is all the hard work for if I can't enjoy a holiday once in a while.

For me if I gorge I feel guilt and it can put me in a whole ED cycle.

I find it hard to believe one day of enjoying yourself will derail your efforts. But hey, that's just me.

I use to be that way too but I've lightened up quite a bit. Now I stuff my face silly :lol:

Seriously though, your body will digest just so many calories. The rest will be waste. So stuff away for that one day! :D

well up here in canada thanksgiving is on oct 11 so we get ours a month early.. but since im dual canadian/american we celebrate both !! double turkey !!
 
Cranberry sauce will be hard to resist :nanner:

Do they make no sugar added cranberry sauce? How can I make it myself? I'm guessing cranberries, water, gelatin and splenda?
 
SUGAR FREE PUMPKIN PIE

1 (16 oz.) can pumpkin
1 1/2 c. skim milk
2 eggs
1/2 c. bisquick mix
20 to 22 pkts. Equal bran sweetener
1/4 tsp. ground cloves
1 tsp. cinnamon
2 tsp. vanilla

Grease a 9 inch pie plate or a 6 x 10 inch container. Beat eggs and
add pumpkin, spices, biscuit mix and sweetener mix well. Microwave on
half power until thoroughly heated, stirring frequently. Pour into
plate and microwave on half power 20 to 30 minutes or until set. May
need to shield edges with foil to prevent over cooking. You will need
a turn table for this. Don't substitute any other sweetener in this
pie.

As far as cranberry sauce, I would just take a cranberry sauce recipe and replace the sugar with Splenda. :shrug:
 
fighting an ED means just that, FIGHTING it.
Straying away from foods only gives them more power .
Learning to deal with guilt and choices help you gain control in the long run.

Ok - Here it is, a fat-free, pure carb recipe for....:

:hot: Rye and Oat Cookie crusted Apple and Pear Pie :hot:


Crust-
1.5 cup ground oats
0.5 cups wholemeal rye flour
1.5 cup old fashioned rolled oats
1/2 cup sweetener (or sweeten to taste with desired sweetener - I use stevia)
1.5 teaspoons ground cinnamon
0.5 teaspoon nutmeg
1 teaspoon baking soda
3/4 cup unsweetened applesauce
1 egg white
2 teaspoons vanilla essence

~ Preheat oven to 180°C and prepare a pie dish (a shallow dish, about 9 inches)
~ Mix together the flour, oats, sweetener, spices and baking soda.
~ In another bowl, mix the applesauce, egg white and vanilla.
~ Add the wet mix to the dry mixture and blend well.
~ Place 2/3rds of the mixture into the dish and knuckle out to form the base (about 1 cm thick) [alternatively, on a floured surface, just roll out the mixture and transfer it into the dish]. Cover with aluminium foil and fill with blind baking shells then bake for around 10-15 minutes before removing.
~ Allow the crust to cool and harden.

The filling -
5 apples, peeled and sliced into raw chunks
2 pears, peeled and sliced into raw chunks
1 tablespoons honey
3/4 cup 100% natural apple juice
1 teaspoons cinnamon
0.5 teaspoons ginger
2 teaspoons vanilla extract
1 tablespoon gar gum (to thicken - can use cornstarch if you can't find this)
1 teaspoon grated fresh ginger
1 tablespoon lemon juice

~ Combine apples, pears, honey, ½ cup apple juice, cinnamon, vanilla, marmalade and lemon juice in a saucepan and cook over medium heat, until apples are tender.
~ In a cup, mix the gar gum and the remaining apple juice and add this to the apple mixture and cook until it thickens (usually takes about 5 minutes).
~ Turn the heat off and allow the mixture to sit and thicken further.
~ Spoon the apple mixture into the baked crust, roll out the remainder of the crust mixture and place over the pie. Firm down and crimp the edge, cut some air holes in the top of the pie and place back into the hot oven and for a further 15 to 20 minutes.

Serve warm with warm custard or vanilla ice-cream.
